1/8" is for 2.8mm crimps, which are commonly used with tail lights. Sold in roughly 30mm lengths. Enough to cover the crimps and provide a good seal. Also sold by the foot.
3/16" is for 4.8mm connectors, like Schmidt hubs use. Sold in 25mm pieces or by the foot.
1/4" is used for coaxial connectors. A piece is roughly 40mm long.
